Want an easy recipe?
- use your favorite store-bought salsa (deli fresh/refrigerated is best) as a base
- add (more) fresh tomatoes, red onions, cucumber, cilantro (all chopped & "pulsed" in a blender or food processor), half a small can of summer or white corn, a drizzle of olive oil, a splash of red wine vinegar, salt & pepper to taste and BWALAH!
I like to garnish with a dollop of sour cream & fresh avocados. Serve chilled with tortilla chips. So yummy. The perfect summer dish.
